Everything Stew: An Easy Weeknight Dinner
I have a plethora of "go-to" Crock Pot recipes, but my new favorite game is taking whatever food odds and ends I may have laying around my fridge/pantry and seeing what delicious meal I can make out of it. Monday night I took stock of my kitchen and here is what ended up in the pot:
4 chicken breasts
1 Stalk of celery, chopped
3 Carrots, chopped
1 can of Stewed Tomatoes
1 cup of Medium Spicy Salsa
1 15 oz. can of Hominy
3 cups of cheap Red Wine
1 tbsp. Cumin
1 shake Italian Herb Seasoning
Several healthy shakes of Red Pepper Flakes
Salt and Pepper, to taste
The only problem I ran across was realizing that I didn't have any broth to add, so I just sloshed a little bit of extra red wine in there. The key to using a slow cooker is that you want enough moisture in the recipe; otherwise, the food will dry out while it cooks all day. Tuesday morning I plugged the crock pot in and set it to cook at low for 10 hours before I left for work, and crossed my fingers that I'd have a warm, homey, and delish stew waiting for me when I got home from rehearsal around 10 PM that night.
Let me tell you guys, this recipe is a keeper! It's spicy, filling, and super healthy - look at all those veggies! I've dubbed it "Chicken Hominy Everything Stew", and the best part is that all I had to do when I got home was ladle some into a bowl and chow down.
