An Ode to Eggs: Soft Boiled Veggie Bowl
First, the Soft-Boiled Veggie Bowl. Here's what you'll need:
- Leafy greens
- Olive Oil
- Red Pepper Flakes
- Extra veggies (really anything you have left in the fridge)
- Crumbly Cheese
- 2 eggs
- Total Cost: Approx. $2.00 (if that)
TWO: At the last minute, throw in your extra veggies (I had tomatoes) so they will soften a bit with the sauteed greens.
THREE: While your greens are cooking down, put a small pot with just enough water to cover two eggs on the stovetop. Bring to a boil and pop your eggs in.

FIVE: Build your bowl, finishing it off with the carefully placed eggs and a sprinkle of crumbly cheese (I had goat, but feta would be yummy too), salt, and pepper.
