An Ode to Eggs: Smashed Avocado Toast
One of my early birthday presents was a set of camera lenses from Photojojo that attach to your iPhone and I've already become obsessed. I'll write a dedicated post about each lense later, but please enjoy these photos using the Polarizer lense. I can already tell a huge difference in the quality.
Anyway, moving on. This post is Part 2 of my Ode to Eggs and I made Smached Avocado Toast with a Soft Boiled Egg. Here's what you'll need:
- 2 slices of sturdy bread (cracked wheat works well)
- 2 eggs
- 1 avocado
- Salt and pepper
- Olive oil
- Chili powder
TWO: Once the water boils, put your eggs in and let them boil to desired "done-ness" (I prefer 5 minute eggs).
THREE: Once your bread reaches optimum toastiness, smash half of your avocado on each slice. I do this by slicing the avocado in half, throwing away the pit, scoring the inside with a sharp knife, then scooping out the chunks onto the toast with a spoon. Drizzle with olive oil, salt, pepper.
FIVE: Break your eggs with a fork and let the yolk soak into the avocado toast. Lather, rinse, repeat!
